Step-by-Step Instructions

  • Preheat your oven to 325°F (163°C).
  • Generously season the beef chuck roast with salt and pepper.
  • Heat olive oil in a large Dutch oven and sear the roast for about 4 minutes on each side until brown.
  • Sauté the onions in the same pot over medium heat for about 5 minutes until they start turning golden.
  • Add minced garlic, cooking for another minute, then sprinkle in flour and tomato paste.
  • Deglaze the pot with beef broth, red wine, and Worcestershire sauce while scraping up browned bits.
  • Add thyme and bay leaves, then nestle the roast back into the pot.
  • Arrange the carrots and potatoes around the roast.
  • Cover and transfer the pot to the preheated oven. Cook for 3 to 3.5 hours.
  • Remove from oven and let the roast and vegetables rest on a serving platter.
  • Stir in balsamic vinegar to the remaining cooking liquid and adjust seasoning as needed.
  • Slice the roast and serve with vegetables, ladling the cooking liquid over the top and garnishing with parsley.
