  • Begin by placing the two boneless, skinless chicken breasts at the bottom of your CrockPot.
  • In a medium mixing bowl, combine the cream of chicken soup, cream of mushroom soup, Rotel tomatoes, and chicken broth. Stir until everything is well mixed, forming a creamy, aromatic base. Pour this mixture evenly over the chicken in the CrockPot.
  • Carefully add the diced onion, bell pepper, and minced garlic on top of the sauce-covered chicken. Sprinkle the seasoned salt, black pepper, garlic powder, and onion powder over the mixture. Gently stir to distribute the flavors evenly.
  • Cover the CrockPot with its lid, setting the temperature to low, and let it cook for 6-8 hours or high for 3-4 hours until the chicken is tender.
  • After cooking, remove the chicken from the CrockPot and shred it using forks. Return the shredded chicken to the CrockPot and mix well.
  • Cook spaghetti noodles according to the package instructions until al dente. Drain and toss with olive oil.
  • Add the cooked spaghetti and 1 cup of shredded cheddar cheese to the CrockPot. Stir until well coated and the cheese melts into the sauce.
  • Sprinkle the remaining cup of shredded cheddar cheese over the spaghetti mixture. Cover and cook for an additional 10-15 minutes to melt the cheese.
