Step-by-Step Instructions for Cranberry Roast Beef

  • Preheat your oven to 325°F (163°C).
  • In a medium saucepan, combine cranberries, beef broth, sugar, balsamic vinegar, soy sauce, Dijon mustard, and minced garlic. Bring to a gentle boil, then reduce to simmer for 10 to 15 minutes.
  • Place the beef roast in a large roasting pan and drizzle with olive oil. Rub in salt, black pepper, dried thyme, and rosemary.
  • Place the seasoned beef in the center of the roasting pan. Pour half of the cranberry sauce over the top, reserving the rest.
  • Cover the pan with aluminum foil and roast for approximately 2 to 2.5 hours, checking for desired doneness.
  • Remove the foil 30 minutes before the roast is done. Baste with remaining cranberry sauce.
  • Once done, let the roast rest for 15 minutes before slicing.
  • Slice against the grain and serve with reserved cranberry sauce and optional garnishes.
