For the Chicken

  • 1 whole chicken (4-5 pounds)

For the Cranberry Glaze

  • 2 cups fresh or frozen cranberries
  • 0.5 cup pure maple syrup
  • 0.25 cup unsalted butter melted
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar

For Seasoning

  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

For the Aromatics

  • 1 whole onion quartered
  • 2 cloves garlic minced
  • 1 whole orange zest from 1 orange

For Garnishing

  • 0.25 cup fresh parsley optional

Step-by-Step Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large mixing bowl, combine cranberries, maple syrup, melted butter, Dijon mustard, apple cider vinegar, salt, black pepper, thyme, rosemary, minced garlic, and orange zest. Stir well and set aside.
  • Pat the whole chicken dry and place it breast-side up in a large roasting pan.
  • Pour half of the cranberry glaze over the chicken and rub it into the skin.
  • Stuff the quartered onion inside the chicken cavity.
  • Roast the chicken for 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  • Around 15 minutes before done, pour the remaining glaze over the chicken.
  • Remove from the oven and allow to rest for 10-15 minutes before carving.
  • Carve and serve warm, garnished with parsley and any remaining cranberries.

Notes

Choose quality chicken for best results. Let the chicken rest after cooking to retain moisture. Experiment with fresh herbs for enhanced flavors.
