Preparation Steps

  • Pat the cod fillets dry, season with salt and pepper, and set aside.
  • Heat olive oil in a skillet over medium-high heat, then add the cod fillets and cook for 3-4 minutes on each side until golden.
  • In the same skillet, add the halved cherry tomatoes and cook for 2-3 minutes until softened.
  • Stir in the minced garlic, oregano, and red pepper flakes, cooking for an additional 2 minutes.
  • Return the cod fillets to the skillet, spoon sauce over them, and heat for another minute.
  • Remove from heat, sprinkle with fresh basil, and squeeze lemon juice over the dish before serving.
