  • 1-2 cups chicken broth use as needed to ensure the stew is saucy.

Step-by-Step Instructions for Chili Verde

  • Begin by rinsing the green tomatillos under cold water to remove any dirt, and remove their husks.
  • In a large pot, heat vegetable oil over medium heat until shimmering.
  • Add the pork shoulder to the pot and sear the meat on all sides until browned, about 5 to 7 minutes.
  • In the same pot, add the chopped tomatillos, cilantro, jalapeños, salt, and black pepper. Stir well for 2 to 3 minutes.
  • Return the seared meat to the pot and add chicken broth to cover the ingredients. Bring to a gentle simmer.
  • Cover the pot and reduce heat to low. Cook for about 1 hour, stirring occasionally.
  • Taste and adjust seasoning as necessary, adding more salt or pepper as needed, then simmer uncovered for an additional 5 minutes.
  • Ladle the Chili Verde into bowls and serve hot, paired with fresh tortillas or over rice.
