Ingredients
  

For the Noodles

  • 2 packages Ramen noodles 6 oz each, seasoning packets discarded

For the Chicken

  • 1 lb Boneless, skinless chicken thighs cut into bite-sized pieces
  • 2 tablespoon Vegetable oil for sautéing

For the Vegetables

  • 1 Red bell pepper sliced
  • 1 cup Snap peas
  • 1 Carrot julienned
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger minced
  • 3 Green onions sliced, white and green parts separated

For the Sauce

  • ¼ cup Soy sauce
  • 2 tablespoon Oyster sauce
  • 1 tablespoon Sesame oil
  • 1 teaspoon Sugar
  • ¼ teaspoon White pepper

Instructions
 

Cooking Instructions

  • Start by bringing a large pot of water to a vigorous boil over high heat.
  • While the water heats, whisk together in a small bowl soy sauce, oyster sauce, sesame oil, sugar, and white pepper.
  • In a large wok or skillet, heat vegetable oil over high heat until shimmering. Add chicken and stir frequently until golden brown and cooked through.
  • In the same pan, add more vegetable oil and toss in bell pepper, snap peas, and carrot. Stir-fry until vibrant and just tender.
  • Add minced garlic, ginger, and white parts of green onions. Stir-fry until fragrant.
  • By now, the water should be boiling. Add ramen noodles and cook for 2 minutes. Drain and set aside.
  • Return the cooked chicken to the pan with vegetables. Add the drained noodles and sauce, stirring together until everything is heated through.
  • Garnish with green tops of sliced green onions and serve hot.
