For the Noodles

  • 2 packages Ramen Noodles or whole grain/rice noodles for a healthier twist

For the Chicken

  • 1 lb Boneless, Skinless Chicken Thighs or chicken breasts for a leaner option
  • 2 tablespoon Vegetable Oil or sesame oil for extra flavor

For the Veggies

  • 1 Red Bell Pepper sliced, can swap with any bell pepper
  • 1 cup Snap Peas or green beans/broccoli
  • 1 Carrot julienned, can replace with zucchini or bell pepper strips
  • 3 cloves Garlic minced, fresh is best
  • 1 tablespoon Ginger minced, fresh offers a brighter flavor
  • 3 Green Onions sliced, separate white and green parts

For the Sauce

  • ¼ cup Soy Sauce or tamari/coconut aminos for gluten-free
  • 2 tablespoon Oyster Sauce or hoisin sauce as a vegetarian substitute
  • 1 tablespoon Sesame Oil or extra vegetable oil if unavailable
  • 1 teaspoon Sugar or honey/maple syrup as a natural sweetener
  • ¼ teaspoon White Pepper or black pepper if preferred

Step-by-Step Instructions

  • Bring a large pot of water to a rolling boil over high heat. Once boiling, add the ramen noodles and cook for about 2 minutes. Drain and set aside.
  • In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, sugar, and white pepper until combined. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large wok over high heat. Add bite-sized pieces of chicken and stir-fry for 5–6 minutes until cooked through. Remove and set aside.
  • In the same pan, add remaining tablespoon of vegetable oil. Add sliced red bell pepper, snap peas, and julienned carrot; stir-fry for 2–3 minutes.
  • Add minced garlic, minced ginger, and white parts of green onions to the vegetables; stir-fry for an additional 30 seconds until fragrant.
  • Return chicken to the pan along with drained ramen noodles and sauce mixture. Toss for 2–3 minutes until heated through and well-coated.
  • Garnish with sliced green onion tops. Serve immediately and enjoy!

Notes

Use fresh ingredients for the best flavor and nutrition. Undercook the noodles slightly and add more sauce gradually to achieve desired flavor balance.
