Preparation

  • Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  • Place cubed butternut squash on the baking sheet, drizzle with olive oil, and season with cinnamon, garlic powder, onion powder, and cayenne. Toss to coat evenly. Roast for 15-20 minutes.
  • In a skillet, heat olive oil over medium-high heat, add sliced red onion, and cook until translucent, about 3-5 minutes.
  • Reduce oven temperature to 350°F (175°C) after removing squash. Roll out dough on a floured surface to a circle about ¼-inch thick.
  • Spread Boursin cheese over the dough center, layer the roasted squash, sautéed red onions, and sage leaves on top.
  • Fold dough edges over filling, brushing with heavy cream and sprinkling with parmesan cheese and black pepper.
  • Bake the galette for 45-50 minutes until golden brown.
  • Cool for 5-10 minutes before serving, topped with crumbled gorgonzola dolce.

Notes

Use cold butter for a flaky crust. Don't rush the roasting for better flavor. Even layering is key for taste in each bite. Watch baking time for golden crust and allow cooling for easier slicing.
