Step-by-Step Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat until shimmering. Add the breakfast sausage, breaking it up with a spoon, and cook for about 5 to 7 minutes until it's browned and cooked through. Remove the sausage from the skillet and set it aside, leaving any drippings for added flavor.
  • In the same skillet, add the remaining tablespoon of olive oil. Toss in the finely chopped onion and sauté for about 3 minutes, stirring occasionally until the onion is softened and translucent.
  • Stir in the diced butternut squash and cook for approximately 10 minutes, adjusting the heat as necessary. Stir occasionally, letting the squash soften and develop flavor.
  • Add the diced apples to the skillet with the softened butternut squash and cook for another 5 minutes, stirring gently to combine.
  • Sprinkle the ground cinnamon, nutmeg, salt, and pepper over the mixture, then stir well. Allow everything to cook for another minute to let the spices warm.
  • Add the cooked sausage back into the skillet, stirring everything together gently. Cook for an additional 2 to 3 minutes, or until everything is heated through.
