  • Next, introduce the chopped bell pepper to the pot, stirring it into the mixture. Cook for an additional 2–3 minutes until the bell pepper softens slightly.
  • Stir in the diced tomatoes, followed by 1 teaspoon each of paprika and cumin. Allow the mixture to cook for about 5 minutes.
  • Pour in the 14 oz can of coconut milk, stirring gently to combine until fully integrated. Bring the mixture to a gentle simmer.
  • Carefully add the chunks of firm white fish to the pot, ensuring they’re nestled into the stew. Season generously with salt and pepper, letting everything simmer for 10–15 minutes.
  • Once cooked, remove the pot from the heat and sprinkle fresh cilantro over the top. Serve hot in bowls.
