  • Preheat your oven to 325°F (165°C).
  • Heat 2 tablespoons of olive oil in a large oven-safe pot over medium heat. Add lamb shanks and sear them on all sides until browned, about 4-5 minutes per side. Remove and set aside.
  • In the same pot, add sliced onions and minced garlic; cook until onions are translucent, around 5-7 minutes.
  • Add 2 cups of diced tomatoes, 3 cups of broth, and 1 cup of red wine to the pot. Sprinkle with oregano, salt, and black pepper. Bring to a gentle simmer for about 2 minutes.
  • Return the browned lamb shanks to the pot, ensuring they are mostly submerged in the liquid.
  • Cover the pot and transfer it to the oven. Let it braise for 2 hours.
  • Check tenderness by piercing the lamb shanks with a fork. If not fork-tender, return to oven for an additional 30 minutes.
  • Once tender, remove from oven and let rest for 10-15 minutes with the lid on before serving.
