  • 1 cup white or brown rice both types work wonderfully

For the Sausage

  • 1 pound smoked sausage kielbasa or andouille adds smokiness

For the Beans

  • 1 can (15 ounces) black beans

For the Vegetables

  • 1 medium onion chopped
  • 2 cloves garlic minced

For the Spice Blend

  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder adjust to your spice preference

For the Broth and Oil

  • 2 cups chicken broth
  • 1 tablespoon olive oil

Seasoning & Garnish

  • Salt and pepper to taste
  • Chopped fresh cilantro optional

Step-by-Step Instructions

  • Start by rinsing the rice under cold water in a fine mesh strainer until the water runs clear. Drain well and set aside.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat until it shimmers.
  • Add the sliced sausage to the hot skillet, cooking for about 5–7 minutes until browned.
  • Stir in the chopped onion and bell pepper, cooking for 3–4 minutes until softened.
  • Add the minced garlic, paprika, cumin, and chili powder, sauté for 1–2 minutes until fragrant.
  • Mix in the rinsed rice, stirring well for about a minute to coat with oil and spices.
  • Pour in 2 cups of chicken broth and bring to a boil. Reduce heat to low and cover.
  • Let simmer for about 15 minutes, until the rice is tender and has absorbed the liquid.
  • Remove from heat and gently fold in the rinsed black beans. Cover and let rest for 5 minutes.
  • Season with salt and pepper to taste, garnish with fresh cilantro if desired, and serve warm.

Notes

Let the skillet rest after folding in the beans to warm them without overcooking.
