Step-by-Step Instructions for Beef Tagine

  • Heat 2 tablespoons of olive oil in a large pot over medium heat. Add 1 chopped onion and 1 cup of sliced carrots. Sauté for 5-7 minutes until the vegetables are tender and the onion is translucent.
  • Stir in the spices: 1 teaspoon each of ground cumin, coriander, cinnamon, and ginger, along with 1 teaspoon of paprika and ½ teaspoon of cayenne pepper. Cook for 1-2 minutes until fragrant.
  • Add 1 cup of beef chuck to the pot. Increase the heat slightly and brown the beef on all sides, about 6-8 minutes.
  • Pour in 1 cup of beef broth, scraping the bottom of the pot to release browned bits. Then stir in 1 cup of halved dried apricots, 1 cup of halved prunes, and 1 cup of drained chickpeas.
  • Bring to a gentle simmer, cover, and reduce heat to low. Cook for 2 hours until the beef is tender.
  • Check the meat for tenderness; it should shred easily. Serve hot, garnished with fresh herbs if desired.
