Ingredients
  

For the Beef

  • 2 pounds beef chuck roast cut into 2-inch chunks
  • 1 teaspoon kosher salt
  • ½ teaspoon coarsely ground black pepper
  • 2 tablespoons gluten-free all-purpose flour

For the Aromatics

  • 2 tablespoons olive oil or avocado oil
  • ½ unit yellow onion chopped
  • 4 cloves garlic minced

For the Veggies

  • 1 large carrot cut into chunky pieces
  • 2 medium Yukon Gold potatoes diced

For the Broth

  • 2 cups beef broth
  • ¼ cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 leaf bay leaf remove before serving
  • 2 teaspoons fresh thyme leaves plus extra for garnish

  • Season the beef with kosher salt and coarsely ground black pepper, then sprinkle gluten-free flour over and toss gently.
  • In a Dutch oven, heat olive oil and brown the seasoned beef chunks in batches for 3 to 4 minutes on all sides.
  • Sauté chopped onion, minced garlic, and carrot in the same pot for 2 to 3 minutes until softened.
  • Add Yukon Gold potatoes, beef broth, tomato paste, Worcestershire sauce, bay leaf, and fresh thyme. Stir well and return the beef to the pot.
  • Cover and slow cook in the oven at 325°F (163°C) for 2 to 2½ hours until beef is fork-tender.
  • Remove from oven, discard bay leaf, taste and adjust seasoning as needed.
  • Serve stew in bowls, garnished with fresh thyme leaves, and enjoy warm.

Notes

Quality meat matters for tenderness; don't skip browning the beef for depth of flavor. Adjust seasoning before serving and use fresh herbs for best taste.
