Ingredients
  

For the Casserole

  • 6 pieces beef sausages
  • 2 pieces carrots sliced
  • 2 pieces onions chopped
  • 1 tablespoon olive oil for browning
  • 400 g chopped tomatoes canned
  • 250 ml beef stock
  • 1 tablespoon tomato purée
  • 1 teaspoon mixed herbs

Cooking Steps

  • Preheat your oven to 180°C (350°F). Gather your ingredients.
  • In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the 6 beef sausages and cook for 8-10 minutes until browned.
  • Remove the sausages and add 2 chopped onions and 2 sliced carrots to the pan, cooking for 5-7 minutes until softened.
  • Stir in a 400g can of chopped tomatoes, 250ml of beef stock, 1 tablespoon of tomato purée, and 1 teaspoon of mixed herbs. Simmer for 5 minutes.
  • Return the sausages to the pan, stirring well to combine.
  • Transfer the mixture to a casserole dish and cover. Bake in the preheated oven for 1 hour.

Notes

Feel free to customize vegetables or add spices to suit your taste. This casserole is perfect for make-ahead meals.
