  • Heat ¼ cup of olive oil in a large, heavy-bottom pot over medium heat. Season the 4 bone-in beef shanks with salt and pepper. Dredge each shank in 3 tablespoons of flour until evenly coated.
  • Add the floured beef shanks to the pot. Brown the meat on all sides for about 8-10 minutes. Once browned, remove the shanks from the pot and set them aside on a plate.
  • In the same pot, add the diced onion, carrot, and celery. Sauté over medium heat for approximately 5-7 minutes until softened and fragrant.
  • Pour in 1 cup of white wine and scrape up any browned bits stuck to the bottom. Cook for about 2-3 minutes, allowing the wine to reduce slightly.
  • Stir in 1 cup of beef stock and 2 cups of diced tomatoes. Add the fresh thyme and rosemary, followed by the browned beef shanks.
  • Bring the pot to a gentle simmer over low heat. Cover the pot and let it braise for about 2 hours.
