Step-by-Step Instructions

  • Preheat your oven to 350°F (175°C) and set the oven rack to the middle position.
  • Combine shredded chicken (or beef), roasted Hatch green chiles, ground cumin, garlic powder, onion powder, salt, and pepper in a mixing bowl.
  • Warm each corn tortilla in a dry skillet for about 30 seconds on each side.
  • Place about three tablespoons of the filling mixture in the center of each tortilla, roll it tightly, and place seam-side down in a greased baking dish.
  • Pour green enchilada sauce evenly over the filled tortillas.
  • Sprinkle shredded cheese evenly over the enchiladas.
