Ingredients
  

For the Meats

  • 1 pound chicken cut into pieces
  • 1 pound beef cubed
  • 1 pound pork

For the Vegetables

  • 2 ears corn cut into chunks
  • 2 medium potatoes peeled and diced
  • 1 large plantain sliced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 large bell pepper chopped

Seasonings and Liquid

  • 1 tablespoon oregano fresh
  • 1 teaspoon thyme
  • 4 cups water
  • salt to taste
  • pepper to taste

For Serving

  • 2 wedge lime for serving

Step-by-Step Instructions

  • In a large pot over medium-high heat, add chicken, beef, and pork. Season with salt, pepper, oregano, and thyme. Sear meats for 5-7 minutes.
  • Heat oil in a separate pan. Add chopped onion, minced garlic, and chopped bell pepper. Sauté for 5 minutes until soft.
  • Add aromatics to the pot with seared meats. Stir well to combine and meld flavors for about 2 minutes.
  • Pour in water, bring to a boil, skimming any foam off the top.
  • Reduce heat to low, cover, and simmer for 45 minutes.
  • After 45 minutes, add potatoes, plantain, and corn. Mix gently and simmer for another 30-40 minutes.
  • Taste and adjust seasoning with more salt and pepper if desired.
  • Let the pot sit covered for a few minutes before serving. Serve hot with lime wedges.
