Filling

  • 2 cups butternut squash peeled and diced
  • 2 medium onions thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh thyme dried thyme works as well

Creaminess

  • 1 cup goat cheese crumbled
  • ½ cup heavy cream

Garnish

  • 1 large egg for egg wash
  • ¼ teaspoon red pepper flakes optional

Steps

  • Preheat your oven to 400°F (200°C).
  • Toss butternut squash with olive oil, salt, and black pepper, then spread in a single layer on a baking sheet and roast for 25-30 minutes.
  • Heat olive oil in a skillet, add onions, and cook for about 20 minutes until caramelized.
  • Roll out puff pastry, prick with a fork, and fit into the tart pan.
  • Spread caramelized onions over the pastry, add roasted squash, crumble goat cheese on top, drizzle with heavy cream, and sprinkle with thyme.
  • Bake for 25-30 minutes until golden brown and bubbly.
  • Let cool for 10 minutes before slicing into wedges and serving.
