Ingredients
  

For the Marinade

  • 0.5 cup Olive oil
  • 0.25 cup Soy sauce
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 4 cloves Garlic minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Honey (or maple syrup)

For the Seasoning

  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary
  • 1 teaspoon Smoked paprika
  • to taste Salt
  • to taste Pepper

For the Skewers

  • 16 ounces Mushrooms whole or halved
  • Optional colorful veggies like bell peppers, cherry tomatoes, and zucchini

Instructions
 

Step-by-Step Instructions

  • In a medium bowl, whisk together olive oil, soy sauce, balsamic vinegar, Worcestershire sauce, Dijon mustard, minced garlic, honey, thyme, rosemary, smoked paprika, salt and pepper until smooth.
  • Place mushrooms in a resealable bag or shallow dish. Pour marinade over mushrooms, seal or cover, and refrigerate for at least 30 minutes (ideally 2-3 hours).
  • Soak wooden skewers in water for 30 minutes. Preheat grill to medium-high heat.
  • Oil grill grates lightly. Thread marinated mushrooms onto soaked skewers, alternating with optional veggies if desired.
  • Grill skewers for 10-12 minutes, turning occasionally, until mushrooms are tender and golden brown. Optionally brush with leftover marinade.
  • Transfer grilled skewers to a platter and garnish with chopped parsley or chives. Serve warm.

Notes

Let mushrooms marinate for at least 2 hours for best flavor. Always soak wooden skewers before grilling to prevent burning.
