  • 2 cups roasted and chopped green chilis
  • 2-3 pounds pork roast (shoulder or butt)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons minced garlic
  • 1 yellow onion, diced
  • 7 cups chicken broth, divided (4 cups for cooking, 3 cups for later)
  • 1.5 cups tomatillo salsa (salsa verde)
  • 1 tablespoon cumin
  • 0.5 teaspoon Mexican oregano
  • 1 pinch ground cloves
  • 2 large potatoes, peeled and cubed
  • 1 juiced lime
  • masa flour for thickening

Step-by-Step Instructions for Colorado Green Chili

  • Roast the chilis under a broiler or on an open flame for about 10–15 minutes, turning occasionally until the skins are charred and blistered. Transfer to a bowl, cover with a cloth for 10 minutes to steam, and then chop finely after cooling.
  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 diced yellow onion and sauté for about 5–7 minutes until translucent.
  • Stir in 2 teaspoons of minced garlic, 1 teaspoon of salt, and 1 teaspoon of pepper. Cook for an additional minute.
  • Cut 2–3 pounds of pork roast into bite-sized chunks and add to the pot. Brown the meat on all sides for about 6–8 minutes.
  • Pour in 4 cups of chicken broth and mix in 1 ½ cups of tomatillo salsa, 1 tablespoon of cumin, ½ teaspoon of Mexican oregano, and a pinch of ground cloves. Bring to a gentle simmer.
  • Reduce heat to low, cover, and let the chili simmer for 2 hours, stirring occasionally.
  • After 2 hours, add 2 large peeled and cubed potatoes and the remaining 3 cups of chicken broth. Simmer for an additional hour until the pork is fork-tender.
  • Stir in the juice of 1 lime once the pork and potatoes are tender.
  • If desired, mix masa flour with water to create a slurry and stir it into the pot. Simmer until the chili thickens.
  • Ladle the chili into bowls and serve hot, garnished with crema or fresh cilantro if desired.

Notes

For the best flavor, choose fresh, ripe green chilis and allow at least 2 hours of simmering. Freeze leftovers for easy meals later.
