  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil for sautéing
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • salt to taste
  • pepper to taste

For the Eggs

  • 4 large eggs

For the Garnish

  • fresh cilantro or parsley chopped
  • avocado slices optional
  • crumbled feta or queso fresco optional

Step-by-Step Instructions

  • In a medium-sized skillet over medium heat, add 1 tablespoon of olive oil. Allow the oil to warm for about 1 minute.
  • Once the oil is hot, add the chopped onion and sauté for approximately 3-4 minutes or until translucent. Stir in the minced garlic and cook for an additional minute.
  • Gently stir in the drained and rinsed black beans, along with 1 teaspoon of smoked paprika, ½ teaspoon of ground cumin, salt, and pepper to taste. Cook for about 5 minutes.
  • Using the back of a spoon, create small wells in the heated bean mixture. Aim for four evenly spaced wells.
  • Crack one large egg into each well, cover the skillet, and allow to cook for 5-7 minutes.
  • Once the eggs are cooked to your desired doneness, remove from heat and sprinkle with chopped fresh cilantro or parsley. Optionally serve with sliced avocado and crumbled feta.

Notes

Consider serving with warm tortillas or crusty bread for a complete meal. Customize toppings to your taste!
