  • 8 ounces fresh noodles or spaghetti if unavailable
  • 1 tablespoon vegetable oil adds richness

For the Sauce

  • 0.5 pound ground pork or chicken for a lighter option
  • 2 cloves garlic minced
  • 1 tablespoon ginger minced
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame paste or peanut butter
  • 1 tablespoon chili oil adjust to taste
  • 1 tablespoon rice vinegar

For the Finishing Touches

  • 1 tablespoon Sichuan peppercorns adjust to taste
  • 2 stalks green onions chopped
  • 1 cup fresh vegetables bok choy or cucumbers
  • 0.5 cup chopped peanuts for crunch

Preparation Steps

  • Boil the water in a large pot and cook the fresh noodles for 3-5 minutes until al dente. Drain and rinse with cold water.
  • Heat vegetable oil in a large pan over medium heat. Cook the ground pork until browned, about 5-7 minutes.
  • Add minced garlic and ginger to the pan, sauté for 1-2 minutes until fragrant.
  • Stir in soy sauce, sesame paste, chili oil, and rice vinegar. Simmer for 2-3 minutes until sauce thickens.
  • Combine the drained noodles with the meat and sauce, mix thoroughly, and heat for another 1-2 minutes.
  • Sprinkle in Sichuan peppercorns, mix well, and let sit for 1 minute to infuse the flavors.
  • Plate the noodles and garnish with green onions, fresh vegetables, and crushed peanuts.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge. For longer storage, freeze in portions for up to 2 months.
