  • Prepare the Beef: Trim excess fat from chuck roast and cut into 3–4-inch chunks.
  • Sear the Beef: In a skillet, heat 1 tablespoon of oil and sear beef chunks on all sides for 3–4 minutes.
  • Transfer to the Crock-Pot: Place the seared beef in the Crock-Pot and pour in 1 cup of beef broth.
  • Mix the Spices: Combine chili powder, oregano, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper in a small bowl.
  • Season the Beef: Sprinkle the majority of the spice mixture over the beef in the Crock-Pot, reserving 2 tablespoons.
  • Cook Low and Slow: Cover and cook on low for 6–7 hours until the beef shreds easily.
  • Shred the Beef: Transfer beef to a plate and shred with two forks.
  • Add Final Seasoning: Mix in reserved spice mixture and juice of 1-2 limes.
  • Warm the Tortillas: Warm tortillas on a skillet or in the microwave.
  • Assemble the Tacos: Fill each tortilla with shredded beef and desired toppings.
