Ingredients
  

For the Spice Blend

  • 1 tablespoon smoked paprika
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper

For the Fish

  • 1 pound white fish fillets tilapia, cod, mahi-mahi, snapper, or halibut
  • 2 tablespoons olive oil
  • 1 lime juiced

For the Bowls

  • 2 cups cooked rice brown or white
  • 2 cups shredded lettuce or cabbage
  • 1 can black beans drained and rinsed
  • 1 cup corn
  • 1 avocado sliced
  • 1 cup pico de gallo
  • ½ cup fresh cilantro chopped
  • ½ cup crumbled cheese optional

For the Creamy Sauce

  • 1 cup Greek yogurt or sour cream
  • 1 lime juice additional
  • 1 teaspoon garlic powder additional
  • 1 teaspoon chili powder additional
  • to taste salt additional

Instructions
 

Preparation

  • In a small bowl, combine the smoked paprika, chili powder, cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix thoroughly.
  • Pat the fish fillets dry. Drizzle olive oil over the fillets and rub it in. Sprinkle the spice blend on both sides of the fillets and squeeze lime juice on top.
  • Heat a large skillet over medium-high heat. Cook the spiced fish fillets for 3-4 minutes on each side until blackened. Remove from heat.
  • In a small bowl, whisk together Greek yogurt (or sour cream), lime juice, garlic powder, chili powder, and salt until smooth.
  • Divide rice among bowls. Layer with lettuce or cabbage, black beans, and corn. Top with one fish fillet per bowl.
  • Garnish with avocado, pico de gallo, and cilantro. Drizzle with creamy sauce and serve with lime wedges.

Notes
