  • 12 oz Fresh ramen noodles

For the Beef

  • 1 lb Flank steak

For the Broth

  • 4 cups Chicken stock
  • 2 tablespoon Gochujang
  • 1 tablespoon Gochugaru
  • 4 cloves Garlic minced
  • 1 in Ginger grated
  • 2 tablespoon Soy sauce
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

For the Creamy Element

  • 1 cup Heavy cream
  • 2 tablespoon Cornstarch
  • ¼ cup Cold water

For Cooking and Garnish

  • 2 tablespoon Vegetable oil
  • 2 tablespoon Sesame oil
  • 2 scallions Green onion sliced
  • 2 tablespoon Sesame seeds toasted
  • ¼ cup Cilantro chopped

Step-by-Step Instructions

  • Slice the flank steak thinly against the grain and season it generously with salt, black pepper, and half of the sesame oil. Let it rest for about 5 minutes.
  • Preheat a grill pan over medium-high heat and add the vegetable oil. Cook the seasoned beef slices for about 2 minutes per side until they develop a nice sear.
  • In a medium pot, heat the remaining sesame oil over medium heat. Add the minced garlic and grated ginger, stirring for about 1 minute until fragrant.
  • Stir in the gochujang, gochugaru, soy sauce, and sugar into the pot, then pour in the chicken stock and bring to a gentle simmer.
  • Mix the cornstarch with cold water to create a slurry and whisk this into the simmering broth, cooking for about 2-3 minutes until thickened.
  • Reduce heat, stir in the heavy cream, and adjust seasoning with salt and black pepper to taste.
  • In a separate pot, bring water to a boil and cook the fresh ramen noodles according to package instructions, about 3-4 minutes. Drain and divide into bowls.
  • Ladle the creamy broth over the noodles, top with sliced grilled beef, green onion, sesame seeds, and fresh cilantro.

Select quality beef for grilling and ensure not to overcook the ramen noodles for optimal texture.
