Step-by-Step Instructions for Sardinia Herb Soup

  • In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering. Add 1 large chopped onion, 3 minced garlic cloves, 2 diced carrots, and 2 diced celery stalks. Sauté for 5-7 minutes until translucent.
  • Incorporate 1 diced zucchini and 1 chopped bell pepper, cooking for an additional 5 minutes.
  • Stir in 1 can of drained and rinsed chickpeas, mixing well for about 2-3 minutes.
  • Slowly add 6 cups of vegetable broth and 1 cup of diced tomatoes. Mix gently until warm.
  • Sprinkle in 1 teaspoon of dried oregano and season with salt and black pepper. Let simmer for 5 minutes.
  • Lower heat and let the soup cook for 20 minutes, allowing flavors to meld.
  • Stir in 1 cup of chopped fresh parsley, ½ cup of chopped fresh basil, and ¼ cup of chopped fresh mint. Cook for an additional 5 minutes.
  • Remove from heat and stir in the juice of 1 lemon.
  • Ladle into bowls, optionally garnish with grated Parmesan cheese. Serve with crusty bread or salad.
