Cooking Steps

  • In a large pot, heat 1 tablespoon of vegetable oil over medium heat.
  • Add 2 pounds of beef chuck chunks, searing them for about 5-7 minutes until browned.
  • Pour in 3 cups of water, followed by 3 tablespoons of curry powder, 2 tablespoons of soy sauce, 1 tablespoon of sugar, and 1 tablespoon of Worcestershire sauce.
  • Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot.
  • Let the curry simmer for 1 hour, giving it a gentle stir occasionally.
  • After 45 minutes, add the sliced carrots and diced potatoes to the pot.
  • Cover and continue to simmer for an additional 15 minutes, or until the vegetables are tender.
  • Taste and season with salt as needed before serving.
