  • 1 teaspoon Dried oregano

  • 1 cup Fresh basil for garnish
  • 1 tablespoon Lemon juice freshly squeezed

  • Pat the cod fillets dry with paper towels and season with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat until shimmering.
  • Sear the cod fillets for about 3-4 minutes on each side until golden brown.
  • Cook halved cherry tomatoes in the same skillet for 2-3 minutes until they soften.
  • Add minced garlic, oregano, and red pepper flakes, and cook for an additional 2 minutes.
  • Return the cooked cod fillets to the skillet and heat for about 1 minute.
  • Sprinkle fresh basil and squeeze lemon juice over the dish before serving.

Notes

Pat the fish dry for a proper sear and use fresh ingredients for best flavor. Don't overcrowd the skillet.
