Step-by-Step Instructions for Autumn Sausage Pasta Squash

  • Preheat your oven to 200°C (400°F). Toss butternut squash in olive oil, season with salt and pepper, and roast for 15-20 minutes on a baking sheet.
  • Prepare Brussels sprouts by tossing them with olive oil, salt, and pepper, then roast in the oven for 20-30 minutes until crispy.
  • Cook bow tie pasta in salted water according to package directions, usually around 9-11 minutes. Reserve a cup of pasta water, then drain.
  • Sauté the sliced smoked sausage in olive oil over medium heat for about 5-7 minutes until browned, then remove from skillet.
  • In the same skillet, sauté minced garlic for 1-2 minutes, then add butter. Once melted, stir in the cooked pasta and reserved pasta water, seasoning with salt, pepper, and smoked paprika.
