For the Skillet

  • 1 pound sausage Choose chicken, turkey, pork, or plant-based
  • 2 medium sweet potatoes Cubed

For the Sauce

  • 2 tablespoons olive oil For sautéing
  • ¼ cup honey
  • 4 cloves garlic Minced
  • 2 tablespoons soy sauce
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For Garnish

  • ¼ cup fresh parsley Chopped

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once shimmering, add 1 pound of sausage and sauté for 5 to 7 minutes until golden brown.
  • Add 2 cubed medium sweet potatoes to the skillet and cook for another 5 minutes, stirring gently.
  • In a bowl, whisk together ¼ cup honey, 4 minced cloves garlic, 2 tablespoons soy sauce, 1 teaspoon paprika, ½ teaspoon salt, and ½ teaspoon black pepper.
  • Pour the honey garlic sauce over the sausage and sweet potatoes, stirring to coat. Cover and simmer for about 10 minutes on low heat.
  • Sprinkle freshly chopped parsley before serving warm.

Notes

For the best results, choose quality sausage and cut sweet potatoes into even sizes for even cooking. Adjust honey to taste if a sweeter sauce is desired.
