Ingredients
  

For the Soup

  • 1 cup white rice
  • 6 cups chicken broth high-quality
  • 3 pieces chicken breasts boneless
  • 2 pieces yellow onions diced
  • 2 pieces limes juice and zest
  • 3 cloves garlic minced
  • ¼ cup fresh cilantro chopped
  • to taste salt

For Garnish

  • ¼ cup additional fresh cilantro
  • optional thinly sliced radish

Instructions
 

Step-by-Step Instructions

  • Pour in 6 cups of chicken broth and heat over medium heat until simmering, about 5 minutes.
  • Add 2 diced yellow onions and 3 minced garlic cloves. Cook for 4-5 minutes until onions are translucent.
  • Stir in 1 cup of white rice and add 3 chicken breasts. Bring to a rolling boil, about 7-8 minutes.
  • Reduce heat to low and cover. Simmer for 25 minutes, stirring occasionally.
  • Remove chicken, shred into bite-sized pieces, and return to pot.
  • Stir in the juice and zest of 2 limes and 2 tablespoons of chopped fresh cilantro.
  • Season with salt to taste and serve warm, garnished with fresh cilantro and optional thinly sliced radishes.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat with a splash of chicken broth.
