Ingredients
  

For the Beans

  • 1 can Chickpeas rinsed and drained
  • 1 can Kidney beans rinsed and drained

For the Veggies

  • ½ cup Black olives sliced
  • 1 cup Cucumber diced
  • 1 medium Red bell pepper diced
  • 1 cup Cherry tomatoes halved
  • ¼ cup Red onion finely chopped

For the Dressing

  • ¼ cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dried oregano
  • 2 cloves Garlic minced
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

For the Garnish

  • ½ cup Feta cheese crumbled
  • ¼ cup Fresh parsley chopped

Preparation Steps

  • Rinse and drain the chickpeas and kidney beans in a colander. Allow them to drain completely for about 5 minutes.
  • In a large mixing bowl, combine the drained chickpeas, kidney beans, black olives, cucumber, red bell pepper, cherry tomatoes, and red onion. Gently mix the ingredients together.
  • In a separate bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, and season with salt and pepper for 1-2 minutes.
  • Pour the dressing over the bean and vegetable mixture and toss gently for about a minute to coat everything evenly.
  • Sprinkle crumbled feta cheese and chopped parsley on top and lightly toss again.
  • Cover and chill the salad in the refrigerator for at least 30 minutes.
  • Once chilled, give the salad a gentle stir and serve cold or at room temperature.
