Step‑by‑Step Instructions

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a medium bowl, combine feta cheese, dill, mint, lemon zest, and black pepper.
  • Place one sheet of phyllo pastry on a clean surface and brush it with olive oil. Add another sheet and brush it with oil again.
  • Cut the phyllo sheets lengthwise into four strips.
  • Spoon about one tablespoon of the filling onto the end of each phyllo strip.
  • Fold the sides over the filling and roll it up tightly.
  • Place rolled pastries seam-side down on the prepared baking sheet.
  • Lightly brush the tops with the remaining olive oil.
