Step-by-Step Instructions

  • Heat 1 tablespoon of olive oil in a large pot over medium heat. Add 1 large chopped onion and 3 minced garlic cloves. Sauté for about 5 minutes until the onion is translucent.
  • Sprinkle in 1 teaspoon of cumin, 1 teaspoon of smoked paprika, 1 teaspoon of salt, and ½ teaspoon of black pepper. Cook for another minute, stirring gently.
  • Add 2 cups of mixed vegetables and stir well. Let them cook for about 3–4 minutes until they soften slightly.
  • Pour in 1 cup of green or brown lentils and 4 cups of vegetable broth. Bring to a gentle boil, then reduce heat to low and let it simmer.
  • Cover the pot and let it simmer for about 30 minutes, stirring occasionally. Check the lentils for doneness.
  • If using, stir in 1 cup of corn in the last 5 minutes of cooking. Serve warm, garnished with parsley and with crusty bread on the side.

Notes

Use fresh, seasonal vegetables for the best flavor. Leftovers can be stored in the refrigerator for up to 3 days or frozen for future meals.
