Instructions

Step-by-Step Instructions

  • In a large skillet over medium heat, add the ground beef, cooking for about 5–7 minutes until fully browned and no longer pink.
  • Carefully drain any excess fat from the skillet. Sprinkle the taco seasoning over the beef, stirring it in for about 1 minute until fragrant.
  • Add the drained black beans, diced tomatoes with green chilies, chicken broth, and corn to the skillet. Stir everything together until well combined.
  • Increase the heat slightly to bring the mixture to a rolling boil, which should take about 2–3 minutes. Reduce the heat to a simmer.
  • Carefully add the spaghetti to the skillet, ensuring it's fully submerged in the liquid. Cover and cook for 10–12 minutes, stirring occasionally.
  • Remove from heat and stir in the shredded cheddar cheese and sour cream until everything is combined.
  • Sprinkle the sliced green onions over the top for a fresh burst of flavor and color. Serve hot.

Notes

For a lighter version, use ground turkey or chicken instead of beef. Store leftovers in an airtight container for up to 3 days.
