For the Pasta

  • 12 oz Rigatoni pasta Sturdy pasta shape

For the Sauce

  • 2 tablespoon Olive oil For sautéing
  • 1 medium Onion Finely chopped
  • 3 cloves Garlic Freshly minced
  • 1 lb Spicy Italian sausage Can substitute with turkey or chicken sausage
  • 1 teaspoon Red pepper flakes Adjust to taste
  • 28 oz Crushed tomatoes Canned
  • 1 cup Chicken broth Can substitute with vegetable broth
  • ½ cup Heavy cream For creamy finish
  • to taste Salt
  • to taste Pepper
  • ½ cup Grated Parmesan cheese For topping

For Garnish

  • a handful Fresh basil leaves For garnish

Cooking Steps

  • In a large pot, bring approximately 4 quarts of water to a rolling boil. Add a generous dash of salt and cook the rigatoni according to the package instructions, until al dente, about 10-12 minutes. Drain and set aside.
  • In the same pot, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until soft and translucent.
  • Stir in the minced garlic, cooking for about 30 seconds until fragrant.
  • Add the spicy Italian sausage, breaking it up and cooking for about 5-7 minutes until browned.
  • Stir in red pepper flakes and toast for about a minute.
  • Pour in the crushed tomatoes and chicken broth, stirring well. Simmer for about 5 minutes.
  • Reduce heat to low and stir in heavy cream. Season with salt and pepper to taste.
  • Return the cooked rigatoni to the pot, tossing to coat well. Cook for an additional 2-3 minutes.
  • Sprinkle in grated Parmesan cheese and stir until melted and blended.
  • Serve hot, garnished with fresh basil leaves.

Notes

Store leftovers in an airtight container for up to 3 days. This dish can also be frozen for up to 2 months.
