Ingredients
  

For the Chicken

  • 2 tablespoons olive oil adds richness
  • 4 pieces boneless skinless chicken breasts can substitute with shrimp or tofu
  • 1 teaspoon Cajun seasoning adjust to heat preference
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes adjust to preference

For the Sauce and Pasta

  • 4 cloves garlic, minced fresh garlic
  • 2 cups chicken broth can substitute with vegetable broth
  • 1 cup heavy cream for a lighter version, use half-and-half
  • 12 ounces fettuccine pasta can substitute with penne or rigatoni
  • ½ cup Parmesan cheese, grated freshly grated is best

For Garnish

  • ¼ cup parsley, chopped can substitute with other herbs
  • 1 tablespoon unsalted butter adds sheen to the sauce

Instructions
 

Steps

  • Heat 2 tablespoons of olive oil in a large, deep skillet over medium-high heat for about 2 minutes.
  • Season both sides of 4 boneless skinless chicken breasts with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, black pepper, and red pepper flakes.
  • Add the seasoned chicken breasts to the skillet and cook for about 6-7 minutes on each side until golden brown and internal temperature reaches 165°F.
  • Remove the chicken from the skillet and set aside to rest.
  • In the same skillet, reduce heat to medium and sauté 4 cloves of minced garlic for about 30 seconds until fragrant.
  • Pour in 2 cups of chicken broth, scraping up any browned bits, and bring to a gentle boil for 2-3 minutes.
  • Stir in 1 cup of heavy cream and bring back to a simmer for 1-2 minutes.
  • Add 12 ounces of uncooked fettuccine pasta, cover, and cook for 10-12 minutes, stirring occasionally.
  • Slice the rested chicken into thin strips.
  • Once pasta is cooked, stir in ½ cup of grated Parmesan cheese until creamy.
  • Add the sliced chicken back to the skillet and stir to combine; adjust seasoning to taste.
  • Stir in ¼ cup of chopped parsley and 1 tablespoon of unsalted butter until melted.
  • Serve garnished with extra Parmesan cheese and parsley if desired.

Notes

This dish is adaptable; swap chicken for shrimp or veggies as per dietary needs. Taste the sauce for seasoning adjustments before serving.
