Ingredients
  

For the Vegetables

  • 1 large eggplant chopped into bite-sized cubes
  • 2 medium zucchini chopped into bite-sized cubes
  • 1 large red bell pepper sliced
  • 1 large yellow bell pepper sliced
  • 1 large red onion sliced

For the Seasoning

  • 4 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 3 cloves garlic minced
  • 1 large lemon juice from one lemon

For the Garnish

  • 1 cup feta cheese crumbled
  • ½ cup Kalamata olives halved
  • to taste salt
  • to taste pepper
  • ¼ cup fresh parsley chopped

Instructions
 

Preparation

  • Preheat your oven to 200°C (400°F).
  • Chop the eggplant and zucchini into bite-sized cubes and slice the red and yellow bell peppers and red onion into strips.
  • In a large mixing bowl, combine the chopped vegetables with olive oil, dried oregano, dried thyme, minced garlic, lemon juice, and season with salt and pepper. Toss thoroughly.
  • Spread the seasoned vegetables evenly onto a large roasting pan in a single layer.
  • Roast the vegetables for 20 minutes, stirring halfway through to ensure even roasting.
  • Sprinkle crumbled feta cheese and halved Kalamata olives over the roasted vegetables and return to the oven for an additional 5 to 10 minutes.
  • Remove from the oven and garnish with fresh parsley and an extra squeeze of lemon juice before serving.

Notes

For best results, cut vegetables uniformly and use fresh ingredients. Store leftovers in an airtight container for up to 3 days.
