For the Chicken

  • 1 lb Chicken breast cut into strips for quick cooking

For the Sauce

  • 0.5 cup Satay sauce offers a nutty, rich flavor
  • 1 can Coconut milk adds creaminess
  • 2 tablespoons Curry paste adjust spiciness to taste
  • 1 tablespoon Fish sauce enhances savory depth

Cooking Instructions

  • In a large skillet, pour in ½ cup of satay sauce and heat over medium heat for about 2-3 minutes until warm.
  • Add 1 lb of chicken breast strips to the skillet, stirring them in the satay sauce. Cook for 5-6 minutes until golden brown.
  • Pour in a can of coconut milk and 2 tablespoons of curry paste. Stir vigorously to combine, letting the paste dissolve.
  • Stir in 1 tablespoon of fish sauce, mixing well and let it simmer on low heat for 1-2 minutes.
  • Reduce heat to medium-low and cover the skillet, letting it simmer for 10-15 minutes until chicken is cooked through.

Notes

Serve with steamed jasmine rice or a fresh salad for a complete meal. Adjust seasonings as desired.
