Ingredients
  

For the Filling

  • 2 cups fresh spinach chopped
  • ½ cup dried cranberries
  • 4 oz goat cheese crumbled
  • 4 oz cream cheese softened
  • 2 cloves garlic minced

For Seasoning & Cooking

  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper adjust to taste
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil for sautéing
  • ¼ cup chicken broth
  • 1 tablespoon balsamic vinegar optional

Step-by-Step Instructions

  • Preheat your oven to 375°F (190°C).
  • Heat one tablespoon of olive oil in a skillet over medium heat. Sauté minced garlic until fragrant.
  • Add chopped spinach to the skillet and cook until wilted, about 3-4 minutes.
  • In a mixing bowl, combine the wilted spinach with dried cranberries, goat cheese, cream cheese, salt, pepper, and thyme. Mix until creamy.
  • Butterfly each chicken breast by slicing horizontally to create a pocket.
  • Season the chicken breasts with salt and black pepper inside and out.
  • Fill each butterflied chicken breast with an equal portion of the spinach and cranberry filling.
  • Secure the filling with toothpicks or kitchen twine and place in a greased baking dish.
  • Pour chicken broth around the stuffed chicken breasts in the baking dish.
  • If desired, drizzle balsamic vinegar over the tops of the stuffed chicken.
  • Cover with foil and bake for 25 minutes, then remove the foil and continue baking for another 15-20 minutes.
  • Allow the chicken to rest for about 5 minutes before slicing to serve.
