  • Heat 1 tablespoon of olive oil in a large pot over medium heat for 1-2 minutes.
  • Add 1 medium diced onion and sauté for 3-4 minutes until translucent.
  • Stir in 2 minced garlic cloves and cook for an additional minute until fragrant.
  • Introduce 1 diced medium carrot, 1 diced celery stalk, and 1 small diced red bell pepper, sauté for 5 minutes.
  • Pour in 1 can of diced tomatoes and 4 cups of broth. Stir and bring to a gentle simmer for 5 minutes.
  • Add 1 can each of kidney and black beans along with 1 cup of corn kernels, mix well.
  • Season with 1 tablespoon of Italian seasoning, 1 teaspoon of smoked paprika, and salt and pepper to taste.
  • Bring mixture to a boil, then reduce heat and simmer for 20-25 minutes.
