  • 2 large russet or Yukon Gold potatoes
  • 1 pound ground beef
  • ½ cup mayonnaise
  • ¼ cup ketchup
  • 1 tablespoon mustard
  • 2 teaspoons pickle juice
  • 1 can canned beetroot
  • 1 cup roasted bell peppers
  • 1 cup corn
  • 1 avocado

Instructions
 

  • Preheat your oven to 400°F (200°C). Scrub and poke holes in the potatoes. Bake for 45-60 minutes until golden brown.
  • Cook the ground beef in a skillet over medium-high heat for 7-10 minutes until browned. Drain excess fat.
  • In a bowl, combine mayonnaise, ketchup, mustard, and pickle juice. Mix until well blended.
  • Slice the baked potatoes in half and scoop a bit out. Top with cooked beef and drizzle with burger sauce. Add toppings.
  • Serve immediately and enjoy the contrasting textures!
