Step-by-Step Instructions

  • In a large bowl, combine your freshly cleaned chicken with browning, Jamaican Green Seasoning, sea salt, All-Purpose Blend, smoked paprika, and Jamaican curry powder. Mix thoroughly until the chicken pieces are fully coated in spices. Transfer the marinated chicken to a securely sealed ziplock bag and refrigerate for at least 3 hours or overnight for the best flavor. Before cooking, let it sit at room temperature for 15-20 minutes.
  • Heat 2 tablespoons of olive oil in a deep skillet or pot over medium-high heat. Once the oil is hot, add the brown sugar and stir until it becomes wet and semi-dissolved, about 1-2 minutes. Next, add the marinated chicken, searing each side for 3-4 minutes until golden. Remove the chicken from the skillet and set aside, keeping it warm.
  • In the same skillet, add another 2 tablespoons of olive oil. Sprinkle in the Jamaican curry powder, sautéing for 2-3 minutes until the spices deepen in color and release a fragrant aroma.
  • Add minced garlic, ginger, scotch bonnet peppers, green onions, carrots, and bell peppers to the pot. Sauté the mix until the vegetables soften and the garlic turns golden, about 3-5 minutes. Sprinkle in ground allspice, sea salt, and black pepper, stirring well to combine.
  • Pour in the coconut milk, chicken stock, and Jamaican pepper sauce, stirring to combine all the flavors thoroughly. Allow the mixture to come to a gentle boil for about 1 minute.
  • Gently add the seared chicken pieces back into the skillet along with the cubed potatoes, crushed scallion, and fresh thyme sprigs. Stir to incorporate everything into the sauce. Reduce the heat to a low simmer and let it cook uncovered for 20-25 minutes, stirring occasionally.
