Steps

  • Preheat your oven to 400°F (200°C). Slice the eggplant into 1-inch thick rounds, sprinkle with salt, and let sit for 15 minutes to draw out excess moisture.
  • In a mixing bowl, combine white miso paste, soy sauce, maple syrup, sesame oil, and rice vinegar. Whisk until smooth.
  • Pat the eggplant dry, arrange on a baking sheet lined with parchment, and brush both sides with the miso glaze.
  • Roast the eggplant for 20–25 minutes, flipping halfway through for even browning.
  • Once roasted, sprinkle with sesame seeds and chopped scallions. Serve warm.
