Step-by-Step Instructions

  • Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  • In a large mixing bowl, combine almond flour, coconut flour, sugar, baking powder, and salt. Whisk until well-blended.
  • Add cold, cubed butter to the dry ingredients and mix until resembling coarse crumbs.
  • In a separate bowl, whisk together eggs, almond milk, and vanilla extract until fully combined.
  • Pour wet ingredients into the dry mixture and gently stir until just combined. Fold in dried fruit or chocolate chips if using.
  • Turn dough onto a floured surface and shape into a disc about 1-inch thick.
  • Cut the disc into 8 equal wedges and place on the prepared baking sheet.
  • Bake for 15-20 minutes until golden brown. A toothpick inserted should come out clean.
  • Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Use cold butter for flaky texture. Don't overmix to maintain a tender scone.
