  • 1 medium green bell pepper mild crunch

  • 2 cups corn tortilla strips heart of dish
  • 2 cups enchilada sauce binds mixture

For the Cheese

  • 1 cup cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded

  • 0.5 cup fresh cilantro chopped

Step-by-Step Instructions for Enchiladas Skillet

  • Heat a large skillet over medium heat for about 2 minutes. Add ground beef, salt, pepper, chili powder, and cumin. Cook for 6-8 minutes until browned and crumbles easily. Remove from skillet.
  • In the same skillet, add chopped onion, green bell pepper, and red bell pepper. Sauté for about 5 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  • Return the cooked beef to the skillet. Add corn tortilla strips and enchilada sauce. Stir together for 2-3 minutes until well-coated and heated through.
  • Sprinkle cheddar and Monterey Jack cheese over the mixture. Reduce heat to low, cover and cook for 5-7 minutes until cheese is bubbling and melted.
  • Remove from heat and garnish with fresh cilantro. Serve hot from the skillet.

Notes

For best results, use lean ground beef and freshly shredded cheese.
