Ingredients
  

For the Chicken

  • 2 pieces Chicken breast Grilled with maple Dijon glaze
  • ¼ cup Maple syrup Adds sweetness
  • 2 tablespoons Dijon mustard Adds tanginess

For the Roasted Vegetables

  • 2 cups Sweet potatoes Cubed
  • 1 cup Brussels sprouts Halved
  • 2 tablespoons Olive oil For roasting
  • 1 teaspoon Salt To taste
  • ½ teaspoon Ground cinnamon Optional
  • 1 tablespoon Fresh rosemary Optional

For the Base

  • 1 cup Brown rice or wild rice Cooked as base

For the Toppings

  • ½ cup Chopped pecans Optional topping
  • ½ cup Dried cranberries Optional topping

Cooking Instructions

  • Preheat grill or skillet over medium-high heat. Whisk together maple syrup and Dijon mustard to create a glaze. Add chicken, brush with glaze, and cook until golden brown and internal temperature reaches 165°F (75°C).
  • Preheat oven to 400°F (200°C). On a baking sheet, combine sweet potatoes and Brussels sprouts. Drizzle with olive oil, sprinkle with salt, cinnamon, and rosemary. Toss, spread out, and roast for 25–30 minutes until tender.
  • Prepare the rice according to package instructions in a medium saucepan. Bring water to a boil, add rice, lower heat, cover, and simmer until tender, about 30–40 minutes.
  • Assemble bowls by placing cooked rice as the base, layering with sliced glazed chicken, roasted sweet potatoes, and Brussels sprouts.
  • Drizzle remaining maple Dijon sauce over the top. Sprinkle with chopped pecans and dried cranberries if desired. Serve and enjoy!
