  • Preheat the oven to 325°F (160°C) and prepare a springform pan by lining it with parchment paper or greasing it.
  • In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until reaching a wet sand texture.
  • Press the graham cracker mixture into the bottom of the springform pan and bake for 8-10 minutes until lightly golden. Allow to cool.
  • In a large mixing bowl, add softened cream cheese and granulated sugar. Beat until light and creamy.
  • Incorporate sour cream and vanilla and mix until fully incorporated.
  • Add eggs one at a time, mixing gently after each addition.
  • In a saucepan, combine heavy cream, brown sugar, and butter over medium heat until it boils, then simmer for 2-3 minutes.
  • Remove from heat and stir in vanilla extract. Divide mixture and color with green and purple gel food coloring.
  • Drizzle the colorful butterscotch over the cheesecake batter and use a toothpick to swirl.
  • Pour the cheesecake batter over the cooled crust and tap the pan to release air bubbles.
  • Bake in the oven for 50-60 minutes until edges are set but the center remains jiggly.
